Six Minutes, Six Fudge Balls
This recipe makes a batch of only 6 raw cacao fudge balls because 5 dates was all I had in the fridge when I was craving something chocolatey. So the point is, this is a no fuss recipe that takes no time to make, and you'll probably have most if not all of these ingredients in your pantry.
Ingredients:
5 pitted medjool dates
1/4 cup shredded coconuts
1/4 cup cacao powder
1 tsp coconut oil
3 tbsp walnuts
1 tbsp honey
(An additional 1 tsp cacao powder to roll the balls in at the end)
Instructions:
1. Throw everything into the food processor until well mixed (use a spatula to scrape off the sides)
2. Divide and shape into 6 equal round balls
3. Gently roll the balls around in the remaining cacao powder till covered
4. Cover and store in the fridge- it also taste better served slightly chilled!
Notes: 1. Because the recipe requires no baking, it is very forgiving if you play around with portions and ingredients. 2. You can also roll the balls around in a variety of other ingredients like chopped nuts, shredded coconuts, and matcha powder instead of cacao powder.
And for those two reasons, this is actually a great playful recipe to do with kids. Just double up on ingredients for a bigger batch!
