Raw Superfood Energy Bars


I get it, sometimes you're in a rush and need some on-the-go fuel... so you grab an energy bar, a nut bar, a protein bar- whatever you want to call it. Most store bought bars have 'thin' or 'healthy' or 'low calorie' written all over the packaging; I've seen dried rice bars drizzled with chocolate and peanut butter plus a few cashew pieces. I don't want to spend my time bashing products so all I'm saying is: read the ingredients list. read the nutritional info. and make an educated decision. Since its almost the weekend, spare some time and make your own healthy energy bars so you're prepared for the week!

Put simply, this recipe:

-requires no baking

-is Paleo and vegan friendly.

-contains no binders or preservatives that you can't pronounce

-perfect for pre/post workout

Ingredients

2 cups medjool dates (pits removed)

1 cup walnuts

1/3 cup chia seeds

1/3 cup hemp seeds

1/4 cup shredded unsweetened coconuts

1/2 cup pumpkin seeds

1/3 cup ground flax seed

1/8 cup goji berries (optional)

Instructions:

-Take out 2 tablespoons of each dry ingredient and leave together aside in one bowl

-Add all the remaining dry ingredients into a food processor. Pulse occasionally to avoid over blending it and turning it all into fine crumbs.

-Add the dates and keep the food processor on until everything starts to stick.

-Use a spatula to scrape the sides in between the process

-Transfer the mixture into a large bowl. Add the remaining dry ingredients that you initially set aside and hand mix

-Line an 8x8 pan with parchment paper

-Press the mixture into the pan and let it set in the fridge for 1-2 hours

-Cut into bars of desired size
