Vanilla Chia Seed Pudding
This makes for a light dessert or a sweet snack! Most store-bought chia seed puddings are so watered down without the thick ‘pudding’ texture. Why? Because of course, chia is the expensive ingredient. But when you make it for yourself, do it right and treat yourself to the benefits that chia seeds have to offer! Within a small serving of Chia seeds, you are nourishing your body with fiber, omega-3, protein, and magnesium.
Yields 6-8 servings
Ingredients:
1 can of full fat coconut cream (unsweetened, 160ml)
4 cups of almond milk
¾ cups of chia seeds
2 tsp of vanilla extract
3 tbsp of honey
1 dropper of stevia or to taste
Instructions:
1. Whisk all ingredients (except chia seeds) in a bowl
2. Add the chia seeds and continue to whisk
3. Let the seeds sprout and the pudding thicken in the fridge for 30 minutes
4. Serve chilled with strawberries and blueberries. Option to garnish with mint leave and shredded coconuts
When left overnight, if the pudding gets too thick for your liking, simply mix in a little almond milk before serving! Top it off with other fruits, paleo granola, super foods, get creative!
