Pook's Pineapple Bowl


My most requested recipe and dish is Pook’s Pineapple Bowl. It’s so simple and easy to make and you save yourself from washing one bowl (every one less chore counts…) Ofcourse there are variations but here’s the original recipe. (Paleo and Vegan friendly, keep it organic!)

Ingredients

1 cup fresh pineapple (ripe- if you cant tell, give it a sniff. It should smell sweet and have a subtle yellow peal)

3 frozen bananas chopped

1 cup of frozen mixed berries (strawberries, raspberries, blackberries, blueberries)

¾ cup of almond milk

Toppings: cacao nibs, goji berries, shredded coconuts, chia seeds)

Step 1. Cut your pineapple in half then carve out the inside (save left overs & freeze it for your next bowl!)

Step 2. Blend all ingredients in blender!

Step 3. Top it off with goji berries, cacao nibs, shredded coconuts, & chia seeds

Tips: Depending on whether you use frozen pineapples or bananas, adjust the amount of almond milk for the consistency you want. I always use a combo of frozen fruits instead of ice to avoid that diluted taste and icy texture. This recipe, without ice, will yield a much creamier result!
