Grass-Fed Paleo Tacos with Spicy Guacamole

December 6, 2017

Sure, you can use lettuce as your 'taco shell'...but let's make something that tastes like real tacos so you don't have to lie to yourself about missing corn tortillas. This recipe involves grain-free tortilla by Siete Family Foods! They have a almond flour tortilla, which I think holds better and has more of that corn tortilla texture, and they also have a coconut and cassava flour one.

Start hosting Taco-Tuesday and spread the love! Good products deserve to be shared- I believe if you're in the mood for a specific dish, you should the take time to learn and make a healthy version of it; this is how I never get bored of staying Paleo.

For the meat:

1lb grassfed ground beef

1 cup diced onions

3 tsp of taco seasoning (yes 3...I like strong flavors!)

3 tbsp avocado oil/ olive oil

3 cloves of garlic, minced

2 tbsp of lime juice

1 tbsp finely minced jalapeño peppers

S&P to taste

Spicy guacamole:

3 small ripe avocados

1 tbsp finely minced red onions

1 tbsp of lime (adjust, you can also do 2 tbsp)

1 tbsp diced tomatoes

1 tbsp finely minced jalapeño peppers

1 tsp finely minced garlic

S&P to taste

For your tacos:

Diced tomatoes

Finely minced red onions

1 pack of Siete Family Foods paleo tortilla

Hot sauce (optional)

1. In a large bowl, sprinkle 2 tsp of the taco seasoning all over the beef and slightly mix. Save the remaining 1 tsp for later.

2. In a large skillet or cast iron pan, heat up your oil on medium-high heat. Add your onions and sautee for a couple minutes before adding the jalapenos and garlic. Sautee everything until the onions are translucent

3.  Add your ground beef and use a wooden spoon/ spatula to break up the meat. Cook till the beef is brown and add the remaining 1 tsp of taco seasoning and lime juice. Adjust seasoning with salt and pepper to taste, remove from heat, and set aside.

4. Make your guac- aka mesh all the guac ingredients together in a bowl with a fork

5. Heat up your tortilla (instructions on the  packet- I threw mine into a large dry pan for 30 seconds) before assembling your taco in the order of beef > diced tomatoes > red onions > guac > cilantro > hot sauce

Go the extra mile and serve with a side of Siete Family Food's paleo 'tortilla chips' to scoop up the extra guacamole!
